The Dining Concept

A Room for the Evening

The restaurant is designed as a natural extension of the poker room—a place to settle into after a session, where the pace slows and the focus shifts to the table in front of you.

The menu changes seasonally, emphasizing local produce and clean, confident flavors. Dishes are designed to be shared or enjoyed individually, with a focus on balance and texture. The wine list is compact and curated, with a strong representation of Australian and European labels.

From Card Room to Dining Room

Guests often move from the poker tables to the dining room in the same evening. The transition is deliberate: the lighting softens, the music lowers, and the menu offers a counterpoint to the intensity of play.

The restaurant opens at 5:30 PM, aligning with the evening poker schedule. A dedicated maître d' coordinates seating for guests coming from the poker room. The kitchen is led by a chef with experience in fine dining and private clubs.

Menu Highlights

A small selection of dishes that define the kitchen's approach: precise, seasonal, and quietly luxurious.

Roasted Lamb Rump

Smoked eggplant, native pepper jus, and a slow-roasted lamb rump that balances richness with a bright, peppery finish.

Pan-Seared Barramundi

Fennel, citrus, and brown butter. A clean, precise dish that lets the fish speak while the sauce adds warmth and depth.

Dark Chocolate Delice

Salted caramel and hazelnut praline. A quietly luxurious finish with a soft, dense texture and a gentle salt-sweet contrast.

Dining Atmosphere

Low Light and Warm Wood

The dining room is a study in restraint: deep blue-black walls, warm oak tables, and soft pools of light from low-hanging pendants. The room feels intimate without being dark, and the acoustics are tuned for conversation.

Custom oak tables with leather-upholstered chairs. Acoustic panels integrated into the ceiling to reduce noise. Lighting is dimmable and adjusted throughout the evening to match the mood.

The bar seats 12 guests at the counter and offers additional lounge seating. Cocktails are prepared with house-made syrups and premium spirits. Small plates include oysters, charcuterie, and a rotating selection of canapés.
